Chả cá Lã Vọng or Vietnamese turmeric fried fish with dill is a specialty of Hanoi.
The ingredient of this amazing dish is Linh (Hemibagrus) fish owing to its fresh and tender meat as well as less bone. The fish is marinated and grilled over charcoal until both sides are almost cooked then fried in a frying pan. Finally, spring onion and dill are added.
“Chả Cá” must be served while hot with rice vermicelli, fried peanuts, grilled rice crackers and coriander, all to be dipped into Vietnamese dipping sauce (contains fish sauce, vinegar, salt, sugar, garlic) or shrimp paste (“mắm tôm”) mixed with lime juice. The grilled fish pieces must not be broken or too dry, but are yellow, tasty, fresh and fatty.
